Good wine makes good vinegar and we have good wine. Red wine vinegars are commonly used in Mediterranean countries and are a staple in French and Spanish homes.

Red wine vinegar is made by allowing wine to ferment until it sours, producing acetic acid. Once fermentation is completed, the vinegar is strained and allowed to age in wooden barrels, and the longer the vinegar ages, the more mellow the flavour becomes.
